Had some left over lump and claw meat dungeness. So decided to make a chowder on this cold night. Turned out pretty damn good. So good I didn't snap a photo before we ate it.

Four quart pan.
4 slices of pepper bacon cut up. Cook until crispy. Set aside bacon.

Pour off all but about a table spoon of the fat.

3 small or 2 average russet potatoes cubed.
Half a red onion chopped
Half a bell pepper chopped.
Bay leaf
Salt
Saute all veggies in bacon pan until soft

Had some left over dark butter and flour roux (1/1 I think) left over.
Added to veggies. Heat until melted. Could just use 1/4 cup flour and 1/2 stick butter.

3 cups of chicken stock
Add to pan and heat until boiling, scraping up all the fond from the bottom of the pan

2 cups half and half
Add to the pot.

About 1 1/4 cup of crab meat. Sprinkle with a teaspoon of dried thyme and a tablespoon of Old Bay seasoning.
Add to pot.

Bring to simmer, cover, and cook for about 6-7 minutes until thickens. Stir occasionally to make sure it doesn't scorch.

Ladle into bowls and sprinkle with bacon bits.

Served with pan toasted garlic bread with butter.
