For those who are getting really tight groups, what are some tips for shooting from the bench? Position of the forend on the front rest, one or two hand hold, cheek pressure, etc.?
I know they are different than shooting a bolt action because of the break open action, pivot pin, etc,

On mine I rest it with the rock jr as close to the frame as possible. Two hand hold but lightly on for end. Firm into the shoulder on the buttstock

Perhaps a bit more practice can help eliminate that 8 o’clock stray.

First there are no quick easy answers. It also depends on are you paying a match entry fee going to the gravel pit and resting it on something to take the shot. There are two kinds of barrels factory style drill and tap into barrel or dovetail with hanger bar. I've paid a lot of match entry fee and here are the things that have helped me get my money back

Light trigger - about a smooth 1 pound
Good pillar bedded forend - I like Tony's
Good front rest
Good rear bag
Good optics
Meticulous hand loading

If your just want to play with it to see what it will do get rested as steady as you can just slightly ahead of the trigger guard. Practice practive practice.

Oversize hinge pins are a scam that only ruins barrels and frames.

Shoot it the same as you shoot your other rifles. My Encore’s have always been 1/2 moa or better. I have owned many. All were either .284 or .308 caliber.

Have killed all but a couple of animals with a 7 Wby.

Don’t shoot it until you have a Stratton custom hanger bar installed with proper forearm and a trigger job
