… so next time y’all are going throw some Bambi on the barbi try this:


Thaw to room temp.
Soak in olive oil
Put on hot barbi
Put on black pepper and enough pats of butter to cover the whole chunk of meat.
Flip and repeat black pepper and butter.
Tent with aluminum foil for a few minutes

DO NOT cook beyond medium rare, Chicago rare is best.

Makes for a delightful “meat forward” flavour.

GRF - never tried this on the BBQ --- have done it with a hot frying pan and they turned out excellent. I will have to give it a try on the BBQ as well.

One thing I have started to do on the BBQ with deer / moose burgers is cook them on a piece of tinfoil --- much less breakage and the searing is a nice add.
