Any idea what a Sako Classic would approximate? 32 oz? More?

I had one for a SA700, and I think it was right around 31oz with 1" pad and paint. It's a fairly trim stock and weight should be similar to the MR and Classic patterns.

I've got a Sako Classic on an AV and it's 34 oz.

Buy it in Edge construction and it'll be 21-22 oz.
