Having an over abundance of tomatoes, I was wondering if anyone has ever frozen green tomato slices to use for fried green tomatoes during the winter. I know ripe tomatoes get soft when frozen but are great in sauces but have never tried freezing the green ones. Any responses are greatly appreciated. Hubby loves fried green tomatoes and figured they would be a nice winter treat.

FRIED GREEN TOMATOES....My all-time favorite movie!!!!!
Seriously, I'm not sure if it would work, or not. You can find out: Slice and freeze one today....try it in a week.

We never had much luck freezing tomatoes, red or green. We once were told to blanch them and add vitamin C - the stay fresh powdered stuff. It didn't work and they just turned brown. I have to wonder if they would be good pickled.

My grandma used to make pickled tomatoes. I will look for the recipe if you are interested although I'm not sure I have it. I think she also made a green tomato relish too.

I know its been hashed over before, but in my 61 years on this planet I have never eaten fried green tomatoes. From hearing everyones praise its something I should at least try. No better time than now. Ideas; suggestions; recipes? Thanks much.

I slice my green tomatoes fairly thin, dredge them in flour with salt and pepper blended in, dip in beaten egg and then re-dredge in flour mixture. Fry in hot bacon grease until golden on both sides. Drain on paper towel. Hubby can make a meal out of them.
Tried dredging them second time in Panko bread crumbs but didn't care for them that way, breading didn't stay on very well.

I think it's a regional difference and according to how your family made them. I've just started using cornmeal for breading fish in the past few years. I've even tried masa for breading as it isn't as gritty as cornmeal (works really well on fish).

Thanks much. slice maters. set aside. get mixture of 1c cornmeal 1/2c flour. salt and pepper maters. dredge in milk, then cormeal/flour back into the milk, then back into the cornmean/flour mixture then pan fry until brown on both sides.

oh, Sassy, never heard about freezin maters, haven't tried it myself either. I wonder if you had a foodsaver thing, that might help a good bit too..keep as much air out so they wouldn't get freezer burnt?

280 Do you use any egg or just dredge the tomato in corn meal?
I freeze ripe tomatos whole every fall for use in soup/chilis in the winter months. Just toss them in a ziploc bag a freeze. BUT I never tried to slice one. Don't think it would work. When I want to use them I just slip the skin off by running water over them and toss them in the soup!

I would just freeze the green tomatoes already sliced. I would think the green ones wouldn't have enough body after they are frozen to slice them. (It's just thought and wondered if anyone else had tried doing it.)
I do freeze my ripe tomatoes the same way you do, sometimes I quarter them if they are really big. So much easier than canning them.

Nope, no egg. I don't like them with a heavy "batter"...just a dusting with cornmeal. Thats why I never get FGTs out, they're always sliced too thick, heavy battered, and deep fried.

I like mine dusted with flour and dipped (coated) with thin tempura batter (rice flour batter)to which I add a healthy dose of Cajun Blackening spice. Just fine. No egg required.

Green Tomato Relish
Grind 1/2 Peck green tomatoes, 9 onions, 8 peppers (varied colors) Sprinkle 1 cup of salt over mix and let stand over night. In the morning, drain dry as possible. Add 2 cups of vinegar, 2 cups sugar, 1 small box of mustard seed, 2 cups of finely chopped celery. Stir all together and put in jars and can in water bath.
Note: This is copied from Grandma's handwritten cookbook. I've never made the recipe. Let me know how it comes out. I'm still looking for the pickled tomato recipe. I'll post when I locate it.

GREEN TOMATO PICKLES 1/4 peck green tomatoes 4 onions 1/4 c. salt 4 peppers, chopped 1 qt. vinegar 1/2 tsp. celery seed 1/2 tsp. mustard seed 1 tbsp. whole allspice 1 tbsp. whole cloves 1 lb. sugar Firm, small to medium green tomatoes (entirely green, not partially ripe) and firm, white onions. Wash well. Slice tomatoes and onions, sprinkle with salt and let stand overnight. Rinse well in cold water; add peppers. To the vinegar, add spices (tied in a muslin bag) and sugar. Mix with vegetables and cook for about 2 hours. Remove spice bag. Seal pickles in hot sterilized jars.

I have seen green tomatoes already sliced and breaded in the grocery stores frozen food section. Sorry, i don't remember the brand but they had squash as well. I haven't tried any, cause I grow my own and just prefer them fresh. I might be tempted to try them after I run out of my own.

I tried Jim's recipe after he had posted it in our last FGT thread. Simple and delicious.
As he might remember,this yankee turned southerner heathen loves to dip mine in a remoulade sauce.
