2 racks of ribs and a couple of whole chickens....maintain pit temp between 250-275 with sticks, basting those ribs every hour with a mopping sauce to die for! Ribs on pit by 10AM, chicken by Noon, everything off by 5PM......all the kids here for 2 night stay over! Ah yes, the last of summer....if only Gustav will leave us alone!

I love 3 1/2 day weekends!

We're good through Sunday anyway.....the Q is Saturday.

I inject the chickens and rub outside with another seasoning, hence I cook 'em whole and leave 'em on foil to retain moisture. Ribs are covered with mustard then a rub I've used for years and slapped on the opposite end of pit, chicken closer to fire. This Klose pit is a beast and maintains fire well.

Mom is bringing her Armadillo eggs (stuffed jalapenos rolled in sausage).....I guess I'll continue my diet after the holiday.

Stetson, have a great weekend! (by the way, oak is the primary wood here)

Oak? I never would have guessed that. I thought Texans were fond of Mesquite, Hickory and Pecan.
Armadillo eggs sound promising! \:\)
My Jalapeno plant is spitting out peppers at a record pace this year. I'm going to make some fresh salsa today.

Oak is primary....hickory, pecan and mesquite for added flavor. Although depending on where you live in this state, mesquite could very well be the primary fuel.

I have and use all 4, but oak sees about 80% usage. And we gather and cut oak in deer camp.....all trees down from Hurricane Rita. No mesquite, few hickories and no pecans at our deer lease...

Cooked up a new BBQ sauce yesterday for the chicken .....mustard, vinegar, sugar, cayenne, catsup. Came out great.

Doing another today, something different for the ribs.....vinegar, lemon, catsup and some other stuff. Mop sauce is a vinegar base as well. My standard, and loved sauce has honey, brown sugar, castup, dry mustard, onion, oil, thyme, oregano, salt, pepper and some other stuff. Excellent sauce, but I'm going extreme this weekend.

Amateurs, don't try this at home.....

Got a butt going in the smoker tonight around 10pm and ribs going on tomorrow about noon. Trying my first homemade rubs (Southern Succor and Wild Willy's Favorite number one rub) that I found on the interned bbq sites. Hope things turn out well Can't wait till dinner on Labor day!

Doing Pork ribs myself but I an am definitely not in you'se guys class! relegated to a gas grill until my wife goes back to work and I can afford a real smoker/cooker! Plus unless someone brings me hardwoods to smoke with it's not going to happen! Pine, aspen and cottonwood just don't work!

Had a great cook Saturday and we all managed to wallow around through Sunday....fishing has been great!

We'll get one more trip around the lake this AM then pull the canoe and ready for the rains that are sure to hit.......

That's a great looking smoker right there !! Saw a couple of its big brothers at the state fair this year , one was a four door monster
I like the looks of Bubba T , just the right size for the back yard and doesn't eat a cord of wood a day \:\)

Going to the lease in a few to get more wood for BubbaT and ready for deer season....there's a few things I upgraded on this pit. 1/2" steel firebox (the rest of pit is 1/4"), kicked the cook chamber from 42" to 48" and in doing that added the counter weight, added the drain valve, the Texas emblem was a must!, and a charcoal basket for long unattended burns so I can sleep. Made it a single door instead of 2 that came standard.

Klose has a website.....once the pit temp is where I want it, it's easy maintaining the fire without a lot of effort.
