A buddy hit the mother load on a bow hunt and dropped some off. There's a bunch of ways to cook and eat them, but I prefer to make them the star of the dish. Sauteed in butter and EVOO, hit with fresh chopped garlic at the end so as not to burn it, add a little chicken stock, reduce, toss with cooked pasta and a handful of grated parmesan, salt and pepper. Looks good. I really like them too. Ours came in June this year. Good stuff.....I didn't have the elk and gravy with mine though I bet that was great!

This batch is one of the best I've seen. They're really big, colorful and have a nose and flavor that is very distinct.
If you live in chanterelle country, you may want to do some hunting for them even at this late time of the year.
