New Mexico style enchiladas. Yum. If you can believe it my Mom, whos Italian Irish, made those for us as kids in the 70's.

Thanks for the recipe.

I'm going to make a half batch of your recipe and a half batch of the pinto recipe Roger posted on the hunters campfire if I can find a small amount of smoked Brisket or something similar at the deli.. That'll take care of a pound of beans and since I'm just feeding me half pound batches are perfect.

Here's the recipe Roger posted if you missed it. It looks simple and tasty just like your recipe does and just the way I like it. smile

I usually like to make batches with enough for three....maybe four....days but like you say "beans freeze well" so I'll do that once in a while too.

In this instance I haven't tried either recipe yet so small batches make sense...or at least to my old feeble mind it does.

Friday night was local lamb shoulder chops, brussel sprouts & bacon N mushrooms.
Too good, was so excited I forgot to take a happy snap !

Saturday night was an easy ribeye, after a late arrival home from ice fishing.

A little bit Jim....thanks for asking....my back is still out and my blood counts are still a worry but my stomach is at least trying to behave.

I've actually gained back 4 of the 28 pounds I lost and more importantly.....I can get a beer down once in a while.

Nice Paul. I like the pork we buy in Ontario, store bought of course. I don't know what the feed base is, barley, or corn?

To answer the question, most of our beef is home raised, locker processed.
