Truth be told thats the first time Ive cooked a bprime rib roast with the ribs removed before cooking. Seasoned, rolled and hogtied it came out better than I expected. Also given the fact It had to wait an hour to be served because people were late for dinner.

Oh yeah and the wifes salad was pretty good as well. grin

Oxtail soup! First I've had in years. My wife mentioned she'd had it a couple times as a kid and liked it. Dang stuff has gotten expensive, now that the dang TV gourmets have ruined cheap cuts. Cuts like skirt/flank/oxtails/tongue have gone from poor folks food to the dreaded "Trendy". mad

Axis tenderloin lightly seared then doused with a mix of garlic, parsley and lemon and served at room temperature. Sauteed green beans, cheddar biscuits and jalapeno poppers. The axis was not unlike carpaccio though will be sliced thinner next time.

For all the crap we throw at WalMarto they get some good....interesting cuts on the shelves.


Thats where I got my hogs head last fall, and where I bought my oxtail.




I am taking a fat beef to butcher here on the 20th. I reckon I might ask for the tail.


Maybe a brisket too....soes I can turn it into corned beef or pastrami.
