Homemade cream of chicken soup with Gnocchi and spinach, and a mixed greens salad with avocado, cucumbers, red onion, shredded chicken, dried cranberries, with homemade lemon/honey vinaigrette, and hearty grain rolls.

Enough soup left to freeze and save for cold rainy days, which seems to be a trend here.

Lunch was chile Colorado, shredded cheese, and two brown eggs from the farmers market. Runny yokes, spicy poke, and melted cheese......Mmmmmm.

Pizza with tomatoes, basil, onions, bell pepper, mushrooms, Italian sausage (from my elk) and dry Gallo salami. Should be shoveling in 10 minutes.

I bought some chicken leg quarters on sale and boiled them.

Sort of.

Simmered til tender with S&P (lots of S), garlic powder, and chili powder.

Then I let them cool. cool

I plucked all the meat off the bones with my fingers.

Then I made burritoes ... flour tortillas, sour cream, salsa, Tapatio, and done.

It was veddy good. smile

My wife and I were "re-introduced" to brussel sprouts recently.......and have really been enjoying them. I had always heard the "stories" about them...but even 2/3rds of our children seem to like them now. smile

I made a beet borscht with elk burger and carrots. Topped with a little dollop of sour cream and served with a seeded baguette and a wedge of Stilton.
