One thing I like about this section is reading about food that is strange/new to me.

Used to help my pard make scrapple at butchering time with the frying pan always close at hand for "quality control"

He can buy fresh hams and bacon quite a bit less than raising pigs up so another tradition goes by the wayside. Sad.
