Pull it off about 4:30 or 5. Hopefully tender as my heart (If I had one). I usually cook my stuff brisket, ribs, etc tender as I got bad teeth. I usually cheat and start my pit fire with theee or four of them ready light briquets. Then I pile on a few pecan twigs and broken limbs before my favorite BBQ wood is applied!
