I have 3 old dry bison leg bones to cut up. What would be the best method? Fine tooth blade on my bandsaw? Wood tooth bandsaw blade? Other?

clamp it to keep it from rolling, I would start with the band saw. It will stink regardless of the method.

If curved put some scrap material under the bow to support it s o blade does not get put in a bind as it cuts.

I would likely go fine tooth bandsaw. The main thing though is to wear a respirator.
