Try this:

Shredded chicken-Rotisserie works best. Especially, Costco.
Mayo-None of that MW crap. Dukes!!
Chopped fine onion, celery and matchstick carrots(optional). Saute if desired.
Chopped smoked almonds.
Tarragon
Salt and pepper...Tonys, etc

This recipe makes a great chicken salad melt. Much like a tuna melt.

The above also works great for tuna salad. BUT I suggest grilling fresh tuna and possibly leaving out the tarragon. Outrageous Tuna melts!!

Just rechecked a batch of tuna salad I made a couple nights ago that's road tripping with Mannlicher and I to WY to hunt with eh76. Needed more relish and a smidge more Duke's. grin

With chicken salad, I will often use dills sliced thin for sandwiches and coarse chop them. I just like the dill flavor better in the chicken salad.

I use chopped sweet red peppers, green olives, and celery salt instead of salt and/or celery seed, and cracked black pepper.

Chi, onions, celery, diced apple. Have to use some tarragon.

Basically BYC's but no almonds or carrots, add apple.

some are close, but not quite there for a good chicken salad.

First, use only chopped dark meat. Grilled is best
Fine diced white onion,, sweet pickle relish
Duke's Mayo
celery seed, and a bit of French Thyme, fresh julienned Taragon

Add halved or quartered green or red seedless grapes to your fav recipe. Chunked breast meat seasoned to taste.

Sam, your recipe is pretty close to how I normally make it but I use a whole bird usually.
Curious why you say dark meat only?

I'm thinking of trying a mix of sweet and will cubes on my next batch for a little different flavor

I like the taste of dark meat chicken more than the bland white meat.

I think it's best to mix the mayo, onion, relish and seasonings before you add the diced chicken. Keeps the flavor more consistent.

That recipe is very close to how Mom and her Mom used to make theirs, Sam. Not much difference between that recipe and how I put mine together these days.

Except I'm out of celery seed right now. (
Must have been the Bloody Mary's.. ? smile

Our son in law is learning how to use our grill/smoker. Early this week he smoked some chicken breast. Wife and daughter made chicken salad out of itand it was great. I'll have to show them this thread for more ideas.

I also go the celery seed route. I generally smoke a family pack of savory rubbed chicken breasts, and use some for other dishes, but reserve some for chicken salad. I add walnuts, apples, celery, onions, sweet peppers, and usually cranberries, in the theme of Waldorf salad. To make it less oily, I use half mayo, and half sour cream. I am actually making some tonight for lunch tomorrow. It is better when the mix sits overnight.

Yes and be sure you start with the right amount of mayo. Nothing worse than finding a giant clump of unseasoned mayo that is not fully mixed in with your chicken salad.

I will agree with thighs as long as they are grilled or smoked. Not much into boiled chicken.

Blockhouse has a great Chicken salad melt.

I use roasted chicken from Costco
Duke's
Sweet salad cubed pickles
Chopped onion and celery
Chopped egg sometimes
lots of pepper
sometimes grapes
sometimes chopped pecans
