My stepdaughter is having antelope for the first time this fall.. I have hunted them for 44 years, but mine always went into jerky.. She would like some recipes for steak and roasts.. I know some love antelope above all other game.. How about a few favorites to get her started?? Many thanks...

Never done anything other than medium rare with some salt and pepper.

Well, thats not entirely true.

You can make a fine stroganof with antelope, swiss steak too.

Salisbury steak as well.


Just substitute antelope for beef is what we do.

Our Mexican guide made breakfast sausage from a couple of young antelope we had taken, never had any before or since they were a real treat.

just finished triple grinding Antelope with bacon, a 10:1 ratio. Sure tastes great.

Steaks medium rare, roasts in the InstaPot just like any pot roast with the vegetables of your choice. Any leftovers get cubed with fried potatoes and fried in butter. Cubed and in a brown gravy over potatoes or rice. My wife makes a version of Italian beef with peppers and onions in the Instapot with the neck roast-then shredded on sandwiches. Ground gets used in tacos, spaghetti, lasagna, etc straight up-no need to mix in fat,beef or pork. I have never added anything or felt the need to get elaborate with ingredients to 'hide' the flavor-I really like antelope and the simpler the recipe the better. I just finished a bowl of chili with straight ground antelope. It is good stuff if you take care of it in the field properly. The only thing it doesn't work as well for is burgers due to the lack of fat to hold it together.

This tenderloin was dinner a few nights ago. Following recipe took too much pink out of it for me. Still very good. 2 minsx2 sides. Less is more.

Nice little chunk of antelope I cut off a hind quarter for tomorrow's dinner. Marinade = EVOO, minced garlic, s&p, finely chopped fresh thyme and sage.
