Already posted an image of my Wyoming deer. Here's yesterday's South Dakota goat along with Tim Olt's blade and my 25 WSM. Probably catch hell for the blade not being bloody.
Yea as best as I can remember anyway.....course my memory ain't what it used to be.....might have been a pheasant but I'm pretty sure it was a Turkey...
Ya know what....the more I look at it the more I think it was a Pheasant....LOL.....good catch GC.....
Here's one of my custom knives at work. CPM154 stainless, exhibition desert ironwood. Gutted and skinned my bull two weeks ago and she still shaves. The mud on the hide will dull one quick gutting and skinning....was proud that the edge held up so well !

my son took a fat 4 point on his property this morning. I went out to process it so he could get to work. I brought a couple of knives from Rick Menefee and two from Tim Olt. They all did a great job, as they always do.
It’s kinda bloody. Grin my Howe mountain light hunter from my combo with the Wyoming skinner, love that combo pac and it makes a hellava steak knife!!

Most time it is too warm here to let your venison hang. If it is say 45 degress out or below I will let it hang overnight. Otherwise I try to have the skinned and quartered carcass in a cooler on a bed of ice within two hours or so of the time from when the critter was shot. I keep the in the cooler, packed in ice, draining and wet aging for at least 6 days. Most times I will then take the meat out, wrap in paper and freeze for 30 to 60 days, so as to kill off any harmful organisms. We can take 5 deer here per tag, so between my oldest son and I we can kill 10 deer a year. Conseqently I will use both backstraps and hinds for making jerky. I will defrost over a couple days in a cooler, then table trim to get any fat and silver-skin off the meat. I employ a jerkey board that has a 1/4" and a 3/8" lip, depending on how thick I want to slice. I generally slice with the grain of the meat. Sometimes I cut sections about 1.5 " x 6 inches, other times I cut slabs, 4" to 6" wide. I will then take bottle of Stubbs Sweet Heat and HEB Carolina style Bar-b-que sauce and pour into a half gallon pitcher, add a bottle of Negra Modelo, garlic powder, Tony Chacheries or Slap yo' Mamma, black pepper, cayenne pepper and just a skosh of chili powder. I mix this "soak" up good. Then I place about 5 lbs of meat in a 2 gallon zip lock bag and pour in the soak. I will then place this bag in a container and put it outside in a cooler on ice for 12-18 hours. After it has soaked I will use High Mountain Seasonings, either Hunters Blend, Mesquite, Cracked Pepper and Garlic or Hickory, depending on my mood. I mix the seasoning and cure in correct proportions and mix it with the meat. I will then put the meat back in the bag and place it back in the cooler on ice for 48 hours. When it is cured, I will put it in my smoker for an hour or two at 145 degrees. After a couple hours of smoke, I will then put it on racks in the dehydrator for another 4 hours or so until it is dried to my satisfaction. Depending on thickness it may take a bit longer.
Gee the days of the RGR in Black wood are over for me. I have a carbon boning & parer combo fitted up and after that I'm done with exoctic woods & micarta's. I have a few odds n ends as far as material I will use,but then, its strictly maple. I am developing a finish light & amber ( darker)
I think the maple goes really good with those old timey carbon blades . I have a source for some killer maple now ,it's all I want to use.
Howe mountain fillet gettin busy today... bad sumbitch..

Yes gee dub, he’s my favorite knife maker for sure. Still can’t get over this fillet, I almost couldn’t bring myself to use it, but it would be wrong!! Haha

Ingram #7+1/4 with this year's Antelope buck. It worked on a doe the next day. I don't like to get my phone bloody so usually take a 'before' photo. Trust me, it got bloody.

Well here the pics are cool, the knives kinda sexy and the language usually civil and clean. I kinda like that. Sure beats some of the stuff you see on other threads. Tim

"Sexy knives", that's some weird shyt right there. Knives and guns are not "sexy", good looking, well built women are. Some strange people in the world for sure and apparently many of them hang out here. Now I will say most of you here seem like nice folks, but definitely a little, shall we say, "different" too.

IIRC, I've been posting in the "knives" forum for about three years. Don't post every day in every thread. However I do follow this forum closely. If memory serves, during that time, I can only recall two or three threads where there was any contention. Name calling and foul language are almost non existent in this forum.
Here is wishing all you guys that frequent this forum all the happiness and joy that the holiday season represents, plus good health, prosperity and blessings in the coming new year.
Gee Dub....in your photo w the Clock and leatherwork....what knife is all the way to the right of the photo? Winston #69 in white scales?
If I understand your question correctly, that is a Dozier I bought here in the Classifieds. Can't remember whether its a professional skinner/hunter etc.
I've been taking it with me lately.
Skinned a doe with it three weeks ago, and my buddy Jason (Sakohunter264) put it to good use on the "big six" I took last weekend......
[quote=Blackheart]I don't know that I've ever seen anything dumber than bloody knife pics. You knife forum guys are some weird MF's. [/quote[
You must be one of those guys who buys his meat from the store where no animals are hurt!
My freezer is full to the brim with venison, Canada geese, cottontail rabbits, grey squirrels, ruffed grouse, and Bass, crappie and walleye fillets. Been hunting and fishing very successfully for 42 years. Still think bloody knife pics and "sexy" knives are just plain weird.

Duly noted.
BTW,
welcome to our little niche.
IMHO, knife pix, and stories are always welcome, even if no animals were harmed, nor the blades be bloody.
G Dub I enjoy your pics! I dont take many bloody knife pics cuz if my knifes bloody so are my Hands!
Even though I hunt out of a camp, I've gotten into the habit of keeping a couple pair of thin disposable vinyl gloves in my pack.
When skinning in camp or even in food preparation there or at home, it is a simple matter to discard the disposable gloves and then shoot your pix, then put on another pair.
I buy the general purpose "vinyl" gloves at Harbor Freight,
I also really like the "Dura-Flock" gloves which I get off Amazon. They have a "flocking on the inside, which, should your hands be moist, make it a ton easier to put on......
Has anybody, anywhere, ever seen a knife collection bigger or finer than GW's ??? It is something to behold.
RS
His rifle collection ain’t too bad either....

Buck woodsman 102 with two Canada Geese that are tonight's dinner. My twins, who are five, got a lesson in game cleaning and they loved it. Now they want a knife for their hunting expeditions.

Gee, Tell me about that Menefee in the third pic down...
Quien Sabe,
I am not much on names or model numbers. If a knife appeals to me and I can figure out a way to afford it I grab it. The knife with the shield is my "BVWD boner". Rick calls that pattern a "lil dumplin". As you can see the other knife has a different blade profile and handle shape. I would imagine the steel is 154CM. The scales would be brown canvas micarta.
Nice picture! I have a Lil' Dumpling with green canvas/red liners. Love it, it processes game/fish and does a lot of kitchen duty for me. I once had a knife from Rocky like that little butcher knife pattern. Like a dummy I sold it. I'd like to get another like yours to replace it.
Every normal man must be tempted, at times, to spit on his hands, hoist the black flag, and begin slitting throats.

It held up great. I was able to get a game cart to the elk so I only had to cut it in half. I bet I could’ve easily done another elk the same way without a problem.
