love corned beef. usually do carrots, onions, potatoes, and steamed cabbage. no reason not to do so.

Wonderful stuff - I've got a hunk in the freezer that probably should be liberated.

I smoke the corned beef with pickling spice on top, then I cut it up into chunks when it is done. I put the chunks, potatoes, carrots, and cabbage in the Ipot for 20 minutes and it is pretty insane. EZ to cook and great comfort food for a snowy day.

Me to Jim, we did years back hen we had to butcher a young cow that broke her back on ice. Not the world's best beef, but curing the roasts helped.
