He is a nice fallow buck Ingwe. Fallow deer are what I hunt the most in my part of the world. They are introduced but are all over the place now. I've never been a fan of eating buck venison but it will go well in sausages or minced up. Congrats on an unusual deer species in your part of the world.

Nice buck! Shot a buck and a doe Fallow last fall, and it is the best eating deer we have ever tasted, exotic or native.

I shot a small fallow buck in Argentina a few years ago, and it was by far the most difficult critter to hunt--I killed a free range stag, a blackbuck and a European wild boar within a couple days, but the fallow took 4 or so days by itself.
Great hunt.

Nice rack! Is the meat any different than a whitetail? I've heard that commercially sold venison is fallow deer. Does anyone know if that's true?

He's pretty tasty...... Any experienced Aussie hunter will tell you that a free range mature fallow buck is one of the most difficult animals to take as they are more solitary and even drift off from the herds to rest during the day in a secluded spot away from the does. It may be fine at other times of the year but we make snags (sausages) from bucks shot in the rutting period. The pork fat and a few herbs and spices mask the flavour. But you eat it all up if you want to.

Some people say the strong flavour is from contamination while gutting and butchering the deer. Touching the smelly hide and then touching the meat. But I've cut steak from the back legs close down to the bone which could not have been contaminated by the skin and it was still strong. I think it may be a hormonal thing during the rut. But I do know I don't like it.

That's a good palm with lots of spellers. What's the other palm like? The thing with fallow is trying to get an even set of antlers. Often one antler will be weaker than the other or have a cleft. A nice even head with both antlers and palms looking similar makes a very nice head.
