I do mine in the pressure cooker. EZ ! Then drop them in an ice water bath. The shells practically fall off by themselves. From exp. I believe the ice water bath is the key after struggling for years.

Mine are similar to many here - mayo (no MW), a little mustard, crisp bacon finely chopped, just a bit of dill relish, pepper and a dash or two of curry powder. People love them but can't quite figure out the curry flavor. Just a bit is all you need.

I tried smoking eggs once. Couldn't keep them lite, rolling papers would fall apart and they tasted like crap. Better stay with Bull Durham grin

My buddy puts a pickled jalapeno slice in his before he fills them. He also uses horseradish in the filling. I like them a lot!
