Following Beaver10’s instructions:
Marinate...I use Italian dressing 3/4 of the bottle....Soy Sauce, 2 tablespoons. And just a touch of brown sugar, 1 tablespoon. Too much sugar makes the grill flames burn the [bleep] outta the bird...Mix it together and marinate 4-5 hours. Turning the chicken once in the marinate.
Cut the spine out first before marinating. Grill heat at 400 to 415 degrees for cooking on indirect heat (in the middle of the grill) Cook at 400-415 degrees with the breast side UP for 50 minutes. Flip chicken to breast side down for the last 10 minutes over the grill flame. Total cooking time 60 minutes. The bird will likely have some burn marks on the wing tips and ends of the legs. Temp is important. Use a thermometer to check bird for being cooked properly if your grill doesn’t have a temp gauge. Delicious...😎

If I have my ducks in a row I prepare the chicken the night before, pat dry and season. Put pack in the fridge uncovered to let it dry out, overnight. You get a crispier skin. I never flip though, always breast up. Either ways fine I’m sure..looks good.
