usually i just salt & pepper and bake mine.

on occasion i'll fry in the black skillet.

they always get eaten.

but how do the rest of ya fix a world class chicken wing?

Brine them overnight.
S and P, garlic seasoned flour dredge.
Fry.

That's our best.

Many times they don't get brined.
Bad weather, or we feel lazy, dredged, misted with canola, baked.

All good, just so they aren't raw or jerkyized.

I do mine on the top rack of the bbq. Put some pam on them so they don't stick. I put greek seasoning and garlic salt on. I have used lemon pepper and franks hot sauce and bbq sauce. They are good!!!

My wife deep fries them for about 10 minutes, then I grill em and give em back to her, then she tosses them in homemade cherry Chipotle glaze. You get the crisp from the fryer, and the char from the grill at the same time. Out of this world good. Use your favorite sauce.

I started to make boneless skinless thighs on the grill. Then I lather on the sauce. Less fat, more meat, cost less.

We season the wings with cajun seasoning and cook in a air fryer till done. While they are cooking in the air fryer we mix up 3 tb spoons Franks hot sauce, 3 tb spoons melted butter and 2 tb spoons of honey and micro wave till melted then stir. Add wings and mixture in a bowl and shake till the wings are covered. This is for 1 pound of wings.

For what you get wings are too pricy for me. I just cooked some thighs, and drumsticks the other night. I parboiled, battered, then deep fat fried those.

I do wings with chicken legs. Buy them cheap in bulk on sale. I grill mine. Homemade BBQ sauce with Frank's a main component....

Imler's poorly in Altoona had wings $40/40# box last week.
We bought some, grin.

But b/s thighs have become a favorite.

I love wings. Don’t often make them, but when I do, deep fried is the proper way. Fry the bejeezus out of them. Get em crispy.

Sauce with whatever. Franks and a bit of butter is classic. Doctor it up with some horseradish and whatever pepper sauce is handy.

Baked can be good, but I much prefer fried.

1. Go to restaurant store (like Smart & Final or Restaurant Depot) and buy the frozen drummies
2. Prepare this
3. Fire up grill (I like Weber Kettle preferably with oak chunks) and cook over indirect heat--the jam will burn up otherwise

the wings are pricey. i remember when the processors couldn't hardly give them away. then they found a way to market them, and then sell the feet to the chinese.

lot's of differences in wings, come in different sizes.

I made some the other night.

They were the large type Gus, not cut up.


I just put some Sweet and Smokey rub on them and grilled em.


Last few minuets I brushed on some BBQ sauce.

we have a zaxby's restaurant that sells about twenty flavors in multiple levels of hotness. they're all good.

but usually i just fix them simple, and they always get eaten. i hate them when they've been under a heat lamp for a spell and get all dried out.

they seem to dry out faster when they're cut up compared to being left in the whole.

i put a little oil on them and then roll them in seasoned flour and bake in the oven for about 20 minutes until they are almost done. then i fry them in the deep fryer and toss them in a buffalo sauce like this:

1 stick butter
the same amount of franks hot sauce
couple tablespoons white vinegar
dash of worcestershire sauce
teaspoon of garlic powder.

finding a quality wing is a challenge. tysons are pretty good but about the same price per pound as breast meat.

Beth adds just a bit of tomato paste to her buffalo sauce.
It thickens it a little, but even better, it stabilizes the hot sauce/butter mixture.
It doesn't separate in to oil and water. (Emulsifies? I don't know. It works though)
