I'd forgo the potatoes and add in some cooked noodles at the end.

Turn the leftover's into hash. I’d venture there is no higher calling for leftover meat than the transformation to hash and eggs. Praise the Lord!

It seems like shank to me, but honestly I’m not sure. When I had my STEER butchered, we went through it but I don’t recall. What exactly is “soup bone”. I got a freezer full of a good bit!
