I'd probably like cherry pie better if all the crappy cough syrup I took when I had strep as a child wasn't "cherry" flavored.

Great looking pie.
I love rhubarb pie (or crisp), been picking for a month now.
Strawberries just starting here, strawberry pie on the menu for sure.
I love most any fruit pies, but the best pie I ever had was homemade with sour cherries grown 100' from the house! My kids still talk about that one.
Going to plant a couple sour cherry trees and recreate those pies!

My mom just made a strawberry rhubarb pie last week....really good stuff! Yours looks great sse, but straight rhubarb is just a bit tart for my taste buds.

This is the one I usually make, it has a much more flavorable rhubarb filling than the double-crust recipe. Wonder if I could just swap out the filllings...hmmmmm

Posted the pics before, but I guess not the recipe in the prior thread. This and others are from Rhubarb Central.

Year ago made this for the guys up at the fishin cabin. Last week made them strawberry cake instead, they were not happy, ingrates... laugh

Rhubarb Crumble

Filling
single pastry crust
1 1/2 cups br sugar, packed
1/3 cup water
6 1/2 Tbsp corn starch
4 1/2 cups chopped rhubarb

Topping
1 cup oats
1/2 cup br sugar, packed
1/4 cup cold water butter
2 Tbsp AP flour

Combine filling ingredients, let stand 15 minutes, pour into pastry-lined dish
Combine topping ingredients, cut in the butter, mix until it resembles coarse crumbs.
Sprinkle topping over pie filling
Bake at 375 deg 50-60 minutes until brown and bubbly. Use a pie crust shield after 30 minutes

Can also make small tarts, that will bake in about 15 minutes

Think I could switch out fillings, and go with a lattice top instead of a full pastry. It is worth it, this filling is good.

sse-Thanks for posting the recipe. My Bohemian Mother and Grandmother put together a load of family recipes in a scrap book form and somehow it took a walk. I have spent years trying to put the best ones back together and the one you posted seems to match well with some hard to read notes that I still have from an arthritic Grandmothers "hand". Just pasted it in a file I keep just for that purpose. It has to be as good as it looks. Can't wait to get enough rhubarb to try it.

Love rhubarb pie and all these pics are killing me!!! Used to be able to get fresh rhubarb from friends and family but those sources dried up and finding any around these parts has been difficult at best. Have been trying to find some plants now that we have someplace to try our hand at growing our own but so far no luck finding any.
Anyhow, great looking pies!

Fresh blueberry, cherry, or apple. All else is a waste of a good crust that could be used for a blueberry, cherry or apple pie. 😄 Pecan is just too sweet for me - couple bites and I’m done till the next yearly bite.

Dad sent a pic today, blackberries are setting on, some early strains starting to turn red. Won’t be long for some good pie.

BlackBerry, apple, cherry, peach. They’re all about equal if done right.

I like most pie especially fruit pies . Blackberry is my go to, saved this one for breakfast. Only have had Huckleberry pie once but it was a standout.
