Grilled Pimento Cheese sandwich and Tomato Soup...one of my favorites but boy is it messy.....took me an hour to get all that cheese out of my mustache.

Went to an all you can eat seafood joint down the road about an hour last night. Not much "seafood" on the menu but I did do the all you can eat catfish.

Damn was it good, they didn't fry the pizz outta the fish.

Probably pulled it from the oil the instant it started to float. Not like most places that let it float for a minute or two after it is actually done.

Probably the best eating out fish I ever had.

In case you didn't see it this is the recipe I use.....easy pezy.

Just don't grate the cheese to fine and make sure the cream cheese is soft enough to mix it in real well. I nuke it for about one minute.

I always skin and freeze up some sockeye for my youngest to help offset costs on his sushi habit. His team won their championship game last night and he wanted a plate of sushi for dinner. The kid loves it!

Just salt and pepper.


Hickory wood.


Let it rest after I pulled it at 130 degrees.

Took a vidallia onion and sliced it and cooked it in the kettle.

Added a jug of Johnny's au jus and two cups water and let it sit covered in grill.

Meat was plumb rare when sliced to it went into the piping hot jus to finish.



Hoagie roll and swiss cheese.


The whole family loved it!



Next time I will buy a little crustier roll. French rolls perhaps.....
