How do those big fish taste? Similar to salmon? Don't eat them catch and release Thanks Done a lot of C&R here in CO. Found large trout were not that tasty unless they were feeding on a lot of shrimp. Best eaters were 12-16" trout except for small brookies around 8".

Have grilled, baked and fried them but have never canned fish or meat. Brookies I have always pan fried in butter or bacon grease especially for breakfast. Easy to get up early catch a few and then have breakfast. Grilled - over fires or coals with just salt and pepper or on a flat grill on the stove or propane even done it on a flat rock over a fire. Baked - in the oven,wrapped in foil stuffed with green onions, garlic, bits of apple or orange/ lemon, sometimes almonds and butter or under coals. Fried - in oil or bacon grease covered with cornmeal or cornmeal/flour mix, sometimes just salt and pepper and into the oil.

Try doing them in a weber kettle using the coals in racks on the sides. Put the gutted fish on a rack over the grill and place a drip pan under it. With the skin on, it cooks in it's own juices. When the eyes turn white, it's done. Just did a 19 inch rainbow. Mum, mum. Those big browns are only caught here in Kalifornia by folks that specialize in them. Which means most die of old age. Nothing wrong with eating them. E
