I have done these and it's just as good as brisket IMO.

That looks great!

Ribs, shanks, roasts...all those cuts with lots of connective tissue and a fair bit of fat seem to do great with some smoke and low ‘n slow.

I really thought you smoked a woodchuck/groundhog when I read the title of the thread.

Couple of my local BBQ spots do a great smoked chuck. Bastards try and tell you it's brisket.

I cooked a chuck on the PK grill Sunday. Chuck is a much better cut than a brisket.

Tried this tonight, on the confidence of Jud...grin...

Pretty good, although my cook time was way more on the Chuck (say 1/3 more) than brisket for some reason. Bark was tough to obtain too. Tasted fantastic though. Three pound chuck roast at 225 took 6 hours to come to 185. No worries. Glad I started early. Homemade BBQ sauce like usual...

Greg;

That looks FANTASTIC!

Bought a 1-3/4 lb small chuck roast to try on the barbie today.

Gonna rub it down with Treager prim rib rub, and sloooow cook on my gas grill, on low, for about 4 hours.

Hope mine turns out as good as yours looks!

This is how mine turned out.

Seems like the chuck is a good one to learn on. Seems to be very forgiving.
