i've always used jiffy, but after the last big cornbread blow-up here (there have been many) i started making from scratch, which is generally always better

They make good pancake mix as well.

I was a single parent so I had to cook. A lot of dumb boy recipes I taught my motor head friends.

Like beer bread. A regular Budweiser and self rising flour.

Or Zatirans Black beans and rice and add a can of corn and a can of black beans.

Good enough for now, you know what you are gonna get, easy and you can stock up on the ingredients.

Dumb boy. Not bad.....just easy and predictable

If anyone likes Jiffy-style cornbread, here is a really good homemade version. Note, the name of the recipe is misleading; this is a far cry from "real southern" cornbread. The author apparently wouldn't know real southern cornbread from a pop tart. But, the recipe is a really tasty homemade rendition of Jiffy - slightly sweet, moist and cakey.

I cut the sugar called for in it down to one tablespoon, and that is plenty for us. We really like this with chili.

Interesting. My guess is it's probably better than the boxed Jiffy. I never said Jiffy was the best flavor, etc., it's just cheap and very handy.
