Wife and I made a quick trip to the Gulf this week. I ate some red snapper for the first time, and it was pretty good. Ordered it fried, which may, or may not, be the best way to eat it, as much as I know. Anyway, I much prefer crappie and catfish.

We deep fry them whole. After scaling and gutting, make some cuts along the sides then dust them in seasoned flour. Out of this world good.

Knew a guy in college. Was buddies with a charter captain. Captain kept the throats for himself. Real good eating.
