Charlie,

Used what i found here in Kitchen.

4 small potatoes
2onion
3 handfuls of them baby carrots

3, 5" links local sausage
Big dollop minced garlic
Black pepper
Tony’s creole seasoning
2 bay leaves
Some thyme
And a small handful of rice
Diced it all up small
Cook til to our liking.
Extrememly simple for my simple mind!

Use 2-3 tablespoons of this paste as the base, cook onions in paste until softened, add protein & sautée until nearly done, add a can of coconut milk & bring to boil, add veges & finish.

I do the veges right at the end, so they still have bite, I hate vege mush !

Thanks Bob.....I figured it was something like that.

Most of the recipes I found called for beans but I like the rice idea.

I have some Jimmy Dean sausage, rice and veggies on hand so I'll make a small test batch next week and go from there.

I went real light on the rice. Just enough to see. Like about 2 or 3 tablespoons. Already had 4 diced potatoes in pot. Had leftovers yesterday for lunch. Better 2nd time, naturally !!

Tonight was a strip loin roast rubbed with Montreal Steak Spice then grilled on the Weber, along with potatoes fried in duck fat and some of Slavyanka’s homemade sauerkraut.

We were out of horseradish so I had some Russian Ajika pepper sauce with the beef.

We are wrapping up our 11 day trip visiting our middle son in Tyler. Knowing my wife and I eating near zero carbs and sugar he made up an Asian marinade and soaked chicken breasts over night, SV'd them this evening then seared them in cast iron. Backed with a chopped Asian salad. Killer.

Making potato/leek soup. Should really call it something else as there is onion, carrot, and celery along in it as well. Chicken broth and water. Salt and pepper. Will add some small pieces of Pella ring bologna, dried chives, and 1/2 and 1/2 later.

Put some chicken hips in the crock pot while I was working today. Fixed some rice and called it good!

No pics, but the night before I put a roast in the crock pot and added carrots and potatoes when I got off, it was a hit as well!

Tomorrow I will finish some deer shanks in the crock pot as well....guess its a crock pot week!
