...that aren't typical table fare?
Like Possums, Raccoons, Groundhogs, Crows, etc.?
I've always wanted to try groundhog. I've watched a video of some dude making a roast out of it, he was damned adamant about cutting out the glands first. Looked pretty good when he pulled the roast out of the oven!

Happy to say the availability of wild hogs has pretty much removed the coon and possum from my diet! Manna from heaven they is!!!

Never ate varmints or other such critters but a guy I know swears that woodchucks are great eating...... Just gotta know the recipe. Groundhogs are just grass fed Marmots that folks considered to be pests, aka varmints..... And varmints don't get high ratings for being edible but this guy claims different; and just wishes they had more meat on 'em.

Evidently guinea pigs are considered a delicacy in Ecuador, they can't be that far from marmots and groundhogs...…..

My grandmom once loudly proclaimed that the black skinned people knew how to cook possum. But she innocently (and loudly) used the N-word. And we were in a crowded restaurant.

Tried groundhog a couple of times. Not too bad, not too good. I'll stick with rabbit.
My ex told me if I ever ate a possum, she'd never kiss me again. Shoulda taken her up on that decades ago.

Very common to see young (mostly) baldies on road kill and other dead stuff here. Redtails too. There's a definite pecking order in play; eagles on top followed by redtails, then vultures. Pretty funny to see a little redtail chowing down on something while the great big vulture stand around waiting their turn.

Tikkanut, great pic!
Yeah Slum, every time we order Chinese I drive my kids nuts with the cat and dog meat jokes. Gotta make you wonder though, the Chinese skirt steak doesn't look like the other restaurant's skirt steak version. But whatever it is, sure tastes good as "Beef Lo Mein"!

Back in the early 60’s when we were guiding for Jaguar in the jungles of mexico, one of our hunters who killed a Jaguar wanted to try and eat some of it. Don’t remember how our cook fixed it but I thought it tasted bitter like it had been pissed on. Only ate a few bites and that was it for me.

Lets start over and talk about something you know about, like Mexican food.

Had cougar, beaver and coon. Didn’t like any of them. And forget diving ducks, tried bufflehead breast, terrible.

I've eaten coon and woodchuck. A young woodchuck is good eating and I've eaten many. Woodchuck liver is really good if you like liver. Coon is nasty and I'd not eat it again.
