A brisket is in the plans for a family dinner. Any good recipes for beans from scratch?

I’ll take a can of store bought beans and doctor the cup.

Usually showboat brand.

Add some mustard, Worcester, brown suga, salt, peppa.

Set it off with some skillet sausage. Diced jalapeños.

Cover with Bacon and put in oven for a bit.

2 lbs. Navy Pea Beans
12 oz. Bottle Molasses
2 tsp. Dry Mustard
2 Tbsp. Baking Soda
½ cup Brown Sugar
3 Tbsp. Ketchup
2 large onions
½ lb. Salt pork
1Lb Bacon (cooked and cut up)
1 lb. pulled pork
Soak beans overnight, discard water.
Add fresh water, baking soda and salt pork, boil 10 minutes.
Strain and reserve water. To the water add Molasses, dry mustard, brown sugar and ketchup.
Layer onions, pork and beans. Cover with reserved liquid
300 oven 5-6 hrs

Dunno, never cooked anything out of scratch.

Pretty much limited to doctoring quality canned baked beans without starting the day before. And those can be very good. Starting with an inferior beans, not so good.

Never been successful with dried beans. Couple of cans of pork and beans (Fareway or ALDI are good - NOT Van Camps!) - drain in a strainer. Cut up some bacon and brown - add cut-up green onion partway through. Dump in the drained beans. Add ketchup and brown sugar, some WooChesterShire sauce and dried mustard. Don't overcook - heat and let cool to get rid of most moisture. Reheat to eat.

Somewhere I've got the idea the water you have has a lot to do with getting dry beans softened.

If you don't want to soak beans over night, just use a few cans of canned pinto beans and kidney beans.

Rinse and add brown sugar, grilled diced bacon and onion, and a slice of diced up ham. Maybe add a little garlic.

Cook on stove top for about two hours on medium heat.

Simple, but WAY better than store bought baked beans.

First thing ya need is lots of time and a deep cast iron skillet, bigger the better.

A pound of Hickory smoked bacon diced up to half inch pieces and browned crisp. Leave grease in pot.

A pound of Jimmy Dean Sausage browned with bacon and grease.

A pound of smoked beef sausage diced up, I like Hillshire.

A pound of diced up smoked pork chops..

A really big sweet onion diced.

Some garlic cloves sliced up.

Couple of Anaheim peppers diced.

One bag of Hurst Hambeens 15 Bean Soup, Cajun, 20 oz, you can order 4 packs off of the internet.

Half bag of small red beans soaked over night.

Drain and rinse beans and dump in pot after other ingredients are browned and in.

Couple of bay leaves, basil and thyme.

Coarse black pepper to taste.

Seasoning salt to taste. Do it last as the meats are salty.

Smoked Paparika to taste.

Toss in some red chili flakes or some hot chilis if ya got them.

A little brown sugar, but go easy, same with the vinegar.

A 16 ounce can of diced Rotilla tomatoes.

Cup of your favorite sweet and spicy barbecue sauce.

One cube of butter.

Bring it all to a slow boil and simmer on stove till beans start to break down, then throw it in the oven with the lid on and bake it on 220 for a minimum of 4 hours.

Keep a shaker of red pepper flakes and Tabasco close by.

Call me when it is done and I will show you how to eat a bunch of it.

Disappointingly enough.....your French Pan having friends were vindicated by the most recent America's Test Kitchen Top Ten review of Dutch Ovens.



Although the Cuisinart enameled pan came in a fairly close second......and 300(!) dollars cheaper!

Yes. Thats the funny thing about it.


A person might drop a couple thousand on a new scope or a grand on a phone......but search the ditches for parts to get his crappy stove working again.


400 bucks for a new stove is too damn expensive!

maybe not where you live, but where i live estate sales are popular, thrift shops...they turn up and go cheap. few weeks ago, saw a Staub for 12 bucks, would'a got it except the lid teetered just a bit
