Hey everyone,

Looking for some of your favorite ways to cook whitetail.

Have burger, chops and steaks. Hoping I can try it some different ways besides the basics like pan fried and into a hamburger

I grew up eating almost nothing but deer and elk for red meat and my mom is a hell of a cook. But in the last 5 or 7 years I discovered how much better a deer steak is if it’s eaten medium rare instead of well done like mom always cooked it.

We still don’t eat anything except deer and elk for our red meat but we don’t cook it to well done and it’s not even in the same ballpark. My favorite is salt and pepper and into a hot skillet with a bit of melted lard. Sauté onions and mushrooms in real butter and worchestershire to go with it.

The wife made a Mississippi roast today in the crockpot that was excellent. Onion soup packet, ranch dressing packet, salt and pepper, and a jar of pepperoncini peppers with some water added for the soup packet. Very good and easy.

My family loves it in a homemade stroganoff over egg noodles. Works great for carne asada tacos as well. We use venison/caribou/moose for everything. Just don’t dry it out.

Rare/medium rare is the only way to cook venison steaks! Or any steak! Most all my good game steaks are cooked over an Oak BBQ open pit.

Ground burger can be used for a huge variety of dishes. Some of my favorites are meat loaf, meatballs which can then be used in spaghetti sauce or meatball sandwiches, tator tot hot dish, tacos, a number of slow cooked chili recipes also.
A few favorites with sliced up cuts of steaks are broccoli/venison, stir fry, crock pot whole roast with potatoes, carrots, onion, celery and a few cans of cream of mushroom.

I bought a wild game cookbook that said in the introduction that if money was tight and you could not afford to buy an instant digital cooking thermometer and his cookbook to skip buying the book until later.... they cost maybe $20.00 anything above 130 to maybe 135 degrees is overcooked venison.

Crock pot or braise those tougher cuts, neck roasts, shanks, etc.

Lots of red wine, broth, spices and low and slow.

Or spice it up and do similar cooking method and make carnitas/barbacoa and fill a tortilla.

For those chops and steaks, a little bit of oil, your favorite steak seasoning (or just salt and pepper) and grill to 120-125 and let rest for 5 min.
