The deer shanks came out so good I decided to try the same recipe and cooking method to a deer neck roast that I normally grind into burger. I will see how it turns out in about three hours!

It should come out great.

The neck roast is my favorite cut of deer.

Well of course I forgot to take any pictures but it was delicious. Everyone liked it and couldn’t believe what cut of meat it was when I told them, after we ate it. This was a boned out neck roast so it probably would have been better with some bones in there but that spinal fluid stuff makes me nervous even though our deer have never had CWD.

Yes. 325 degree oven for 3-4 hours.

For years I thought the neck was best for burger 'cause that's what I was told. Reading a wild game cookbook or three made me realize that I was missing out. Venison neck roasts are one of our favorite game meals.

In third place behind tenderloin & backstrap is neck roast for me. Slow cooked in a crock pot with tater, onion & garlic is my preference. I beats most beef roast IMO.

Yep, we went to saving boneless neck roasts 2 seasons ago.

Slow braised & pulled/shredded the meat, great, super rich, onion flavoured jus/gravy !

Neck meat is excellent for chili, a shame to grind. But then I think it's a shame to grind any venison.
