I do know that the commercial growers used to spray then with MH-30, a chemical that is used for tobacco, in order to keep them from sprouting, thereby increasing "shelf life." I have always raised potatoes in the garden, and at one time we would not have to buy potatoes until about Christmas, or even later. I didn't have any problem keeping them, as long as you could keep them from freezing.

Now days, I don't raise as many in the garden as I did, because for some reason or another, I can't get them to store as well.

I keep them in a cool, dark area where they won't freeze.

As mentioned, a cool, dark place works best. If they start to sprout & soften you can still save them for a while, Place them in a cold bucket of water over night after breaking the sprouts off & by the next day they will firm up pretty good.

when dinosaur tracks were new, a best friend lived and worked in Twin Falls, Id. He stored his potatoes in the basement in a barrel filled with sand. A layer of sand, then a layer of potatoes, etc. It seemed to work.
