I have a 30-06 Redding Body Die.
Will it work to size a 270 Win case also even though the 270 is slightly longer? Won't it leave a portion of the base of the case unsized?

I've done it, just by not tightening down the 06 body die as far down as I would if I was sizing 06 brass.. had no issues...it worked just fine in my rifle...

Did you leave the lock ring loose on the die, run the 270 case up in until the shellholder contacts the die, then tighten the lock ring down at that setting?

I've used an '06 FL die as a body die for my .270 Win. with no problems. How you adjust the die depends on how much sizing is required/desired. You may be touching the shell holder depending on the dimensions of the die and the dimensions of your chamber, but most likely not.
One of the questions is "when to tighten the locking ring"? If you're not needing to do a min. spec body resize, the die probably won't be in contract the shell holder. I've always run the case up into the die until I've got a good amount of leverage on the press handle, then lock the die down while maintaining this handle pressure. This helps center and square up the die.
The extra length of the case is towards the neck, not the base of the case. The neck is not touched in the body sizing operation.

Same here. Also use a .308 for 7mm-08. You just need to remove the expander ball.

I would watch the shoulder neck juncture, at some point you will want to give the cases a bump with the FL sizer to get that small portion that the 30-06 die doesn't size. Some people set up their dies this way intentionally leaving the bottom of the neck un-sized for a crush fit alignment. This will probably not be an issue until 3-5 or more loadings which is about when I anneal and FL size after using only the bump die.
