I wore a pair of the Cabelas Mendels 2 years ago. They did great, nothing wrong with the boots but I wish I'd bought them at least 1/2 size bigger. For short days they were great, but on longer days, with thick socks I needed more room.
Last winter I had a 25% off coupon from REI along with some dividend money. I combined the 2 and bought a pair of these for around $250. These are very similar to the Mendel boots, but fit me better. I think I'd have been happy with the Mendels had I gone a little bigger on the size. I still have them and wear them with thin socks on days where I don't walk as much.

For warmer conditions they are a little more breathable and with a leather treatment my old ones never leaked. I spent a lot of time running around in the woods turkey hunting this Spring and they did great.
This is a very similar, if not the same boot with Goretex if that is a requirement.
https://www.rei.com/product/887959/lowa-tibet-gtx-hiking-boots-mensI haven't used an insulated boot in 20 years. Good wool socks and a warm jacket keep my feet warm down to around 0. Never hunted below 0, but have spent a bit of time in the woods in the teens with no problems.
