Glad to see it got put to work so timely.
Looks like plenty of knife for that job.
But, I do not like to be under knifed or under gunned so......

I am thinking of doing some S35VN and not sure whether to include this pattern.
Why S35VN? Something new for me, stain resistant and seems to be well received in the market place.

Have you thought about doing CPM 3V? That's another steel that sounds interesting.
