Would be even better if the slow cook portion was cone in a slow cooker!

We always do ours in the slow cooker, I'll see if I can find the recipes we use.

Brown the shanks in a skillet first & the the braise.

Yes, sear then braise. Wine, a few tomatoes, maybe some stock and some herbs.

Brown well seasoned shanks in a spot of oil and remove from pan.

Diced celery, onion, and carrot in pan and sautee for a few. Add SP, garlic and fresh thyme for the last minute then hit with some wine. Bay leaf wouldnt hurt.

Dump veg mix in slow cooker with some stock and a bit of tomatoes paste or whatever tom product you like.

Set meat on top and cook on low until tender. Meat should be in liquid, not under.

I'd take some of the pot likker when its done and reduce it in a sauce pan to make a sauce.

Stunning pictures/presentation as usual!

Mine are boneless (can not bring any bone product into TN from out of state) so I will lose some flavor.

Same theory though, low slow braise with what ever takes your fancy.

I do this with boneless neck roasts too, then pull/chop them for tasty tacos, buns etc !
