I have a remington 700 and the barrel is not centered in the barrel channel. What causes that and how do I correct it.

Sometimes its a bedding issue. IE: the receiver not parallel to the barrel channel. Id check to make sure the stock isnt warped first though.

Sounds like stock has warped or shifted. Purchase a slightly smaller diameter channel scraper, auger out, and reseal channel.

The op doesn't state whether it's synthetic or wood. It could also be a custom stock. I've seen this with bansners and had to relieve the rear tang, re-center and then glass bed the action. Problem solved...
