My favorite is just gravy over a slice of bread.

Extra black pepper.

Gravybites. A staple in my younger childhood. Often that was supper.
Didn't really like it, but that didn't matter.


A few years ago it came to me and I understood a lot a kid misses.

Dad died when I was 3, Mom had 3 kids between 3 and 12.
The oldest was handicapped due a tractor accident and she had
to work from home. A beautician doesn't get rich in rural Pa.
Cousins used to dropp off "extra" deer they killed. Others would give
her bones when they butchered. She would boil them and can the stock and
little bit of meat.

The gravy. Bread was cheap.

I mentioned some of this to her, she started crying and couldn't believe I rembered
that. I misted up, and told her I didn't remember it as anything. It was just
stuff, as an adult it hit me what it meant.

Funny scene.
Mom crying, upset she couldn't do better by us. That I remembered it.
Me crying. Upset that she was upset. So dam proud of my hardworking, resourceful
mother, who took dog scraps and her hard work and turned it into food for her kids.

Just got started and had to tell the story.

It was a staple for us in the 80's and 90's.

No more meat....so you had gravy bread.

Another one was pan fried cube steaks.

Take the steaks out when done. Take water and deglaze the fry pan.

Make kind of a pan sauce. Salt, pepper and water.

Pour sauce over cube steaks.

Eat steaks....dip toast in the liquid.

The recipe I coped calls for a half cup beef drippings. How am I going to get beef drippings? I think I'll use shortning?

Yorkshire is usually made with beef. You can get away with vegetable oil.

Did you preheat the "drippings" before adding the dough? That's the key.

The Betty Crocker cookbook recipe is pretty damn good.

One cup flour
One cup milk
Two eggs
a pinch of salt.

Measure pan drippings and add or subtract to get a1/4 cup oil.
Heat oil in pan till HOT, pour into pan with drippings and oil, put in 450dg oven for 18-22 minutes.

I have doubled and tripled this recipe depending on size of roast or pan.

Alabama boy here. I’m 42, make a pretty good living but I cook this meal a couple times a month with biscuits. My 6 and 10 year old LOVE it.
