Does anyone else prefer it that way? Bought some from a local locker and just cooked it up tonight. Too lean for my liking. Probably 75% meat and 25% fat. Excellent taste! Just too much meat v/s fat and I find the meat tough.
75% fat and 25% meat would be more to my tastes.
I love the chrispy fat and just a small amount of meat. Your choice?

I like lean bacon, too. I don’t want to leave half of it in the bottom of the pan.

Any kind is good to me but if given a choice lean or 50-50%. I love grillades as made in New Orleans. These are like almost 100% lean and are delicious.

I’ve actually found good bacon @ the local Chinese embassy.
Their thick cut is closer to reg’lar, but don’t get the paper-thin normal cut.

This bacon had great taste, don't get me wrong. Just too "meaty" for my tastes.
Maybe the locker made it from a pork roast. LOL!

Personally I believe that all cuts of pork is simply a byproduct of getting to the bacon! I'll take it any way I can get it!

PS I get some uncured stuff that comes from Canada, Top Valu, that's pretty decent. No French writing on the packaging though, so I'm guessing they're making it just for us Americans
