Marty, I have moved away from cutting steaks from the backstrap. Instead I cut them into roasts. I find it easier to keep them from getting overcooked I barbequed a whitetail doe backstrap roast last night. Delicious.

Congratulations on the bou. I have only tasted Caribou once- at Trinity Baptist many years ago complements of our dear departed friend Joe Bush. He made a stew that was heavenly.
