Corncob jelly!!! Mostly color from the cobs. It takes about a bushel of cobs boiled off.

Best if done before the cobs are utilized for an alternate purpose.

A good fig jam is hard to beat. My grandparents had a huge fig tree that as a child I would climb and eat figs till I was sick. Grandma made the best fig jam I've ever had.
When I lived in Northern Utah, every summer fresh raspberries from Bear Lake would show up. People would be hawking then on street corners. They made the best raspberry freezer jam I've ever had.

She's got a giant fig tree in her yard, I mean biggest I've ever seen. Like an oak tree. In Texas.

We use lots of jams/preserves for our prosciutto pizza base sauce.

Fig, peach habanero, pepper jelly, etc.

I tried some wild chokecherry picked from the rail bank, good taste, it did not set up well.
