Mutton chops cooked in a cast iron skillet.
I used a bit of olive oil and some butter. SPG on the chops before hand.
Used some parsley, thyme and rosemary in the pan.....with some minced garlic. The minced garlic was a mistake....all it did was turn black. Didnt hurt the flavor though.
Basted with the butter.
Turned out med rare.
Really, really good. Better than some beef steaks I have eaten in town.
Boiled carrots, potatoes and some home made cheese cake afterwards.

I cooked something last night I have done twice that is worth passing on. I took 2 pork tenderloins and sliced into but not through in 3 places longways to flatten them out. Seasoned both sides with creole seasoning. Diced an apple ,1 1/2 Tb minced garlic, and a handfull of dried cranberries. Added some butter and mixed together and microwaved the filling till butter was melted. Covered the bottom tenderloin with the filling. Then placed the other over it. Wrapped with bacon and tooth picked in place to hold it together. Cooked on charcoal with some hickory wood for smoke to 165. Let it rest before slicing. Wife says it is her favorite pork dish.
