Our turkeys always were de-horned when very young, for which I was grateful because loading them onto trucks would have been even worse if they hadn't been.

I think she said this one was 23 lbs? Brined over night, smoked this morning, just pulled it off an hour or so ago when I was home for lunch. Skin and some backmeat tasted good at least.... Not sure what we're going to do with it. Eat it tonight? Take it to mom and dads tomorrow? Save it for when her grandparents get here Saturday from Texas? Who knows, but I did my part.

Trash can sounds crazy. But...take a brand new galvanized 20-30g can and roll it around in a good hot fire. Burn off the processing oils and coatings. On day of cook, lay down double layer of hd foil on ground twice the width of can diameter. Drive wooden foil wrapped stake in center allowing bird to sit legs down about 8” off foiled ground area and about same distance to top of can. Place ball of foil atop stake and sit the bird upon it from back cavity. Any style of bird, brined or not. Dry bird and add outer seasoning and cavity seasoning. Center can over it and make a good seal to ground. 20lbs of charcoal. About twenty PCs on top and surround can base w rest. Keep the tight to can. Light coals and time a 15lb bird 2 hours from time coals turn gray. Pull can at time limit and check deepest thigh and breast 162-165 degrees. Bird is typically gorgeous and very moist. Plus your oven is freed up for the important stuff!! Good luck. Super simple.

I smoked just a trukey breast. Don't remember the weight. Sliced it up yesterday evening. Also had a hunk of pork shoulder left over from making sausage, that I smoked and sliced too. Just me and the wife, and She don't eat much. Covid had the girls staying at home. miles

Sidenote, my great aunt used to raise turkeys, she would give Mom the biggest one for Thanksgiving, of course she came.
They would run from 45 to 53 pounds, dressed. Weird, but they were solid. The cavity was the same as a 15 pounder. Couldn't get much stuffing in them. The biggest one wouldn't fit Mom's roaster. We had to make a 30 mile trip to buy 3 of the biggest cheap aluminum roasters sold. Two doubled up on a cookie sheet for the bottom, one on top. Then, it didn't fit in her normal oven. She had an ancient stove in the basement, it just fit.
Fed 18 people, lots left over.

An 8# breast. Injected and seasoned, stuffed with a mix of pork sausage, chopped apple an onion. Smoked on Lang smoker with a mix of cherry and pecan. Also an 8.5 ham. 3 people Dressing cooked in the stove. Turned out very tasty.
