Put turkey carcass and leftover leg bones etc in pot.

Put some onion and celery in pot also. Carrots etc are optional.

Cover with water.

Add crushed/crumbled sage leaves and whatever other herbs you prefer.

Boil until meat starts falling off bones, remove bones and pick meat, put back in pot.

You now have turkey soup. Serve with noodles or rice.

Even I can do it.

And I will...............once again...............for the 37th time or so...........maybe more.................I love turkey soup.

All the turkey leftovers went in the grinder and were made turkey salad out of. Great on sandwiches or with crackers the rest of the week.

Turkey Tetrazinni if you also have leftover ham, but the bestus is turkey gumbo, making the rue from giblet gravy. I always freeze some okra to make sure I am prepared for this. Justin Wilson has a recipe but I just wing it.

But then I love a big old sandwich with dressing and cranberry and spicy mustard and even better with ham too.

A different take on the open face hot turkey sandwiche. Take your leftover stuffing heated in the microwave. Then into a well greased waffle iron. Few minutes to get it nice and crispy. Top off with your turkey and gravy.
