Any recommendations on a decent one that isn't garbage, I tried the Tipton ultimate gun vise and it's all plastic and when you turn one of the knobs to clamp it place the one on the opposite side will back out making it almost impossible to secure the gun

Depends on your definition of "gun vise". For stock work I have an old Emmert Patternmaker's Vise. For metal working, a Wilton bench vise, and for gun cleaning, sights/scope mounting, etc., I use (and like) the Tipton. I haven't experienced any issues with the Tipton but then again I only view it as a light duty gun cradle.

Get good padding for your regular vise or a magwell holder. Leather is my preference.

I have used one of these for 20 years. Jaws rotate to fit the piece being held.
