Mixture of browned meat, sautéed onion, garlic, pepper tops, cauliflower rice, some oregano, thyme and fresh Parsley. Mixed in a little bit of cheese and 3 beaten eggs and baked for 40 min at 350.

Doing low carb, so didn't want to use breadcrumbs. But that would work well.

These would be awesome on the grill, but I decided to cook them in a skillet.

INGREDIENTS
Elk
2-4 8oz Elk Steaks, 1 inch thick
2 tsp sweet paprika
2 tsp light chile powder
2 tsp ground cumin
1 tsp kosher salt
2 tbsp olive oil

Butter
4 tbsp unsalted butter, softened
1 clove garlic, minced
1/4 tsp lime zest
1 tsp fresh lime juice

Season and let sit overnight. Mix up the butter and let that sit too

Put half the butter in the pan and get hot

Start frying the elk steaks

Baste while cooking, adding the rest of the butter

Let rest and slice thin

Serve with sauted squash and zucchini
