Anyone interested? My wife likes the baking shows on TV and sometimes gets ideas. Other times they're from our abundant supply of cookbooks.

Oh lord, dont get me started. I'm not diabetic but might as well be, because my sugar cravings are insane. Currently on a diet to get some of the covid weight off, but I am gonna make a spice cake for my wife to take to work next week, may take a pic of it when I make it.

My youngest son made these for Christmas morning. He nailed the flavor and, as important, the texture.

Yes. I made it twice, and will make it again some time soon. Recipe is super simple. I think I mentioned it somewhere in the thread, no? If not, I will find some time today to add it to the thread.

Preheat oven to 400.

Coat 6" springform pan with butter, then lightly coat it with flour.

Put 15 oz of full fat ricotta cheese in mixing bowl.

Add 2 egg yolks and mix.

Separately blend the two egg whites till frothy.

Add back to bowl and mix in.

Add 1/4 cup of confectioner sugar (or regular sugar), 1/2 teaspoon of vanilla, 1 teaspoon of lemon liquor, and zest of one lemon.

Blend all together.

Pour mixture into 6" springform pan.

Place into middle of oven for 15 minutes.

Lower heat to 350 degrees and set timer for 30 minutes.

Take out, and let cool for 20 minutes.

Now into freezer for half hour.

Then into fridge for several hours.

Unfasten springform pan, slice and serve.

You should like it. Italian cheesecake eats much lighter than the German kind most of us are used to. It's also a more subtle flavor. Not as sweet.
