I like a bit of fru-fru chicken salad. Fine dice onion and celery, apple, Mayo, S&P, and tarragon.

Classic is great too.

Came home and she had a roasted bird sitting on the table.
Gonna wash my D beaters and chop it for her.

We use leftover chicken or turkey, but canned chicken works as well, and is always on hand. If needing something quick, grab a can of chicken and start adding ingredients. Dukes (I don't like a ton of mayo, so minimal), some spicy mustard, salt, pepper, dill relish, or jalapeno relish, shot of Worcestershire sometimes, some finely diced onion, or pepper, or olives, maybe minced garlic, not enough of anything to overpower, but enough for some taste. I don't think I've ever made it the same way twice. Like somebody above said, add a slice of cheese and grill it for a melt-

Chicken and tuna both get the same treatment. Mayo ( Hellmans or Dukes...none of that miracle crap ), 2-3 drops of lemon juice, celery, a few chopped green olives, black pepper. A day in the fridge makes it even better.
